Healthy Pumpkin Spice Latte

On Saturday I was in the mood for a sweet coffee, but I didn’t want to buy something that was going to ruin my appetite before lunch. It was a gorgeous day, and Starbucks is walking distance from my place, so it was easy to grab one on the go and be home within five minutes. I’ve had some unsweetened pumpkin puree sitting in my pantry for a while, so I decided to try something new. It was fantastic! I highly recommend it if you enjoy Pumpkin Spice Lattes.

Ingredients:

unsweetened iced coffee (or hot coffee)

2-3 TBS unsweetened pumpkin puree

1 tsp agave

1/2 tsp cinnamon (or to taste — I used a lot more, but I’m obsessed with cinnamon!)

unsweetened vanilla almond milk (to taste)

I would have used a blender, but as I need a new one I swirled it around in my Starbucks cup for a good 30 seconds — the pumpkin puree surprisingly mixes with ease.
